Chickpea Veggie Pasta [GF] + Homemade Roasted Tomato Sauce๐๐คค๐๐ ๐ฑ
I love salads! I love pasta salads even more! Even more than that, I love pasta dishes made into salads because theyโre packed with so many veggies, raw and sautรฉed!
Chickpea pasta is one of my favorite staples because it is easy, filling and a favorite for everyone! I like chickpea pasta better than rice/quinoa mixed pastas because I am learning that some of these products are cross contaminated with gluten. I am super sensitive and pick up on even the slightest contamination in my diet. I have noticed some flare symptoms with eating quinoa or rice based pastas. I know, I know, it feels like โshoot what can I eat then?!โ Here is my rule of thumb, clean up your diet to a stable baseline you feel great at. Then try out the different kind of pastas individually, separated by a few days, then see how you feel.
TO MAKE THIS DISH..
Ingredients:
Gluten free pasta (1-2 boxes)
1 Onion
3-6 Cloves of Garlic
Tomato (3-4 roma, 1-2 c cherry/grape)
Aspragus (half bundle)
Mushrooms, if desired
Artichoke Hearts (in water)
Lemons 1-2
Spinach 1-2 c
Basil
Directions:
-Boil the pasta then rinse in COOL water. Set aside.
-While the pasta is still warm mix 1-2 c spinach in with noodles. The heat will help soften the spinach without cooking it, preserving its raw enzyme properties.
-Chop raw onion (1/2), garlic(1-3 cloves), 3-4 roma tomatoes. Mix together. The tomato juice helps bring these flavors together. Set aside.
-Rinse artichoke hearts to wash away any salt or preservatives they were stored in. Add to pasta.
-Sautee asparagus and mushrooms if you would like here. Rinse with cool water. Add to pasta.
For the sauce:
-Sautee in water cherry or grape tomatoes, garlic (1-3 cloves) and onion (1/2)
-Add ingredients above to blender. Add in fresh basil. Blend on high for 1 minute.
To serve:
-Partition pasta in bowl. Squeeze lemon juice on top. Then add sauce!
Viola.
Healing + DELICIOUS.
For the meat lovers in your family you could add in turkey bacon or rosemary roasted chicken would make a good compliment to this dish!
