Rainbow Dill Pasta Salad ๐ŸŒฟ๐ŸŒˆ๐Ÿฅ—

This was the perfect summertime pasta salad! Light, fresh and tangy! This combo included fresh and steamed veggies, select herbs mixed with chickpea rotiniโ€”I LOVED this dish! Super simple and easy to make!

Hereโ€™s how:

  • Boil gluten free pasta of choice, rinse with cool water, set aside.

  • Sautee in water zucchini, yellow squash, and mushroom. Rinse with cool water. Set aside.

  • Chop 1 red onion, 3-5 garlic cloves, 5-8 tomatoes, one bunch fresh dill, jalepeno or red pepper, & radish to taste. Combine all veggies in bowl.

  • Squeeze 1-3 limes over pasta.

  • Stir in all veggies listed above.

ENJOY!

You could make this salad in SOO many varieties! I ate mine over a bed of spinach and arugula. You could add chicken, avocado, or a cashew ranch dressing sauce. Make it your own and let me know what varieties you come up with!!!
