Birthday Cheesecake Recipe!

Here is that birthday cheesecake recipe my momma made, extra points for you if you eat it with my banana nice cream !
This cheesecake is the BEST not only because..well it tastes freaking amazing..but because it is gluten free + vegan (egg and dairy free). No cashews were harmed in the making of this cheesecake...
For the crust:
▫️1 cup raw almonds, pecans or walnuts. I used pecans pieces as they are cheaper than whole pecans. Food process until fine.
▫️1 cup medjool dates. Add in with nuts and Food process until it sticks together and is fine texture. Press into 7" spring form pan. Set in fridge.
For the cake filling:
▫️1 1/2 cup cahews SOAKED OVER NIGHT OR AT LEAST 5 HRS
▫️juice of 2 lemons
▫️Seeds from one vanilla bean or alcohol free vanilla extract
▫️1/3 c. Raw coconut oil
▫️1/3 cup raw honey or maple syrup (may add more for sweeter consistency
▫️1/2 TSP CINNAMON
All of the above in food processor or blender ((puree cashews with lemon juice, vanilla)).
THEN:
▫️▫️Over low heat melt coconut oil with honey and cinnamon. Blend in with cashew mixture until smooth and creamy. Add to crust and freeze until 30 min before serving.
For the topping:
▫️Cool 1 bag of frozen raspberries with 1/4 cup water and 1/3 cup maple syrup. Bring to a boil. Let cool then add 2 cups freshraspberries.
Pour over top of cake.
